Mushroom and Walnut Salad

Ingredients

224 grams (8 ounces) small button mushrooms

7 tablespoons vinegar (apple cider or balsamic vinegar)

2 tablespoons cold pressed walnut oil or olive oil

2 teaspoons Dijon mustard

Freshly ground black pepper

Sea salt to taste

1 teaspoon date and apple chutney (or chutney of choice)

5 tablespoons finely chopped walnuts

Description

Directions

Clean the mushrooms, remove stalks and slice finely.

Mix together the vinegar, oil, mustard, pepper and salt, and chutney.

Then add walnuts and chill.

Coat the mushrooms with dressing just prior to serving.
